Lemon Poppy Seed Loaf http://www.justtherightspice.com/recipes/lemon-poppy-seed-loaf http://www.justtherightspice.com/recipes/lemon-poppy-seed-loaf#comments Mon, 21 Dec 2009 04:38:32 +0000 Melody http://www.justtherightspice.com/?p=87 Enjoy a slice of this delicious poppy seed lemon loaf with a cup of coffee or tea. We’ve always found that this cake makes a nice snack or dessert. It freezes well so make an extra one to have on hand in the freezer to serve when you have unexpected company.

Ingredients for the cake:
1/2 cup butter
1 cup sugar
2 eggs, lightly beaten
1/2 teaspoon Watkins All-Natural Pure Lemon Extract
1 1/2 cups flour, sifted
1 teaspoon Watkins baking powder
1 tablespoon poppy seeds
1/2 teaspoon salt
Peel of 1 lemon, grated or 1 teaspoon Watkins lemon peel
1/2 cup milk
Watkins Cooking Spray

Ingredients for the glaze:
1/2 cup sugar
Juice of 1 lemon

Directions: Preheat the oven to 350 °F. In a mixing bowl, cream together butter and sugar. Add eggs and lemon extract and beat until mixture is fluffy. Combine dry ingredients in a separate bowl. Add to the creamed mixture, one third of the dry ingredients alternating with half the milk. Pour batter into a 9x5x2 inch loaf pan that has been sprayed with cooking spray and bake for about 50 to 55 minutes.

Let the cake cool slightly before removing to wire rack to cool completely.

Glaze: In a small saucepan, heat the juice of one lemon and the 1/2 cup of sugar on low heat until sugar has dissolved. Pour the mixture over the warm lemon loaf and leave to cool.

Tips from the kitchen: Don’t worry if the top of your loaf cracks, all loaves do that as they rise and bake.

This loaf tastes better the next day!

You can make the frosting in a variety of flavors including chocolate, butterscotch, vanilla, lemon, banana and more to perfectly compliment the cake you are frosting.

Ingredients:
2 cups/500 mL powdered sugar (icing sugar)
1/2 cup/125 mL Watkins Dessert Mix, Chocolate, Butterscotch, Vanilla, Lemon or Banana
1/4 cup/60 mL butter
1/3 cup/80 mL half-and-half (creamo)

Instructions: Combine all ingredients in medium bowl and mix with electric mixer for about 2 minutes. Add more half-and-half or powdered sugar as needed for desired consistency.

This recipe makes enough to frost one 8 inch 2-layer cake, 12 servings.

Tip from the kitchen: Make the vanilla version and then flavor it with one teaspoon of your choice of Watkins extracts and flavors.

Fruit Coffee Cake With Cinnamon Topping http://www.justtherightspice.com/recipes/fruit-coffee-cake-cinnamon-topping http://www.justtherightspice.com/recipes/fruit-coffee-cake-cinnamon-topping#comments Thu, 18 Sep 2008 21:59:17 +0000 Melody http://www.justtherightspice.com/?p=30 This fruit coffee cake is low fat and not too sweet, if you want to reduce the sugar more use unsweetened apricots, peaches, or applesauce and use only 1/4 cup of sugar in the topping. You can use any kind of fruit you have on hand, I’ve made this recipe with frozen raspberries or blueberries as well. Watkins cinnamon

Ingredients:
2 tablespoons butter
4 tablespoons sugar
1 egg or 2 egg whites
1 2/3 cups flour (sifted)
3 teaspoons Watkins Baking Powder
1/4 teaspoon salt
1/2 cup milk
1 teaspoon Watkins Vanilla

1/4 teaspoon Watkins lemon Extract

Directions: Cream together the butter and sugar, add the egg and beat well. Sift together the dry ingredients and add alternately with the milk. Add Watkins Vanilla. Place in an oiled pan and cover the dough with the fruit, adding Watkins Lemon Extract to the fruit really brings out the flavor. Cinnamon topping ingredients:
1 tablespoon butter, melted
1/4 cup flour, sifted
1/2 cup sugar
2 tablespoons Watkins Cinnamon
